How to make soda bread

Soda bread is easy because you can make it without yeast, extensive kneading or proving. It’s best eaten within a couple of days, or you can slice and freeze it to toast later. If you can’t get buttermilk, just add 1 tbsp of lemon juice or white wine vinegar to 250ml of whole milk, stir, and leave to sit for 5 minutes.


Cheese soda bread recipe

Ingredients

  • 150g plain flour, plus extra for dusting
  • 150g wholemeal flour
  • 1 tsp bicarbonate of soda
  • 100g mature cheddar, grated
  • 250ml buttermilk

SPRING ONION BUTTER

  • 4 spring onions, finely chopped
  • 100g salted butter, at room temperature

Method

  • STEP 1

    Heat the oven to 200C/fan 180C/gas 6. Mix the flours, bicarb and 1½ tsp salt in a bowl. Add the cheese, keeping a small handful back, and toss together. Add enough buttermilk to make a soft but not too sticky dough.

  • STEP 2

    Knead briefly then form into a ball. Put on a floured baking sheet and slash a cross on top. Sprinkle with the rest of the cheese. Bake for 30-40 minutes or until the loaf sounds hollow when you tap the bottom. Meanwhile, mix the butter and spring onions together, and tip into a serving dish.

  • STEP 3

    Serve the soda bread just-warm, with the spring onion butter on the side.
