How to make a classic bellini

What is a bellini?
This classic sparkling wine cocktail was created at Harry’s Bar in Venice in 1948, and is traditionally made with fresh white peach purée and chilled prosecco. Delicate and fruity, it’s a go-to brunch cocktail, but also works really well as an apéritif.
Bellini ingredients
You can buy white peach purée online, but if you’re making it fresh, white peaches can be hard to find. Yellow peaches will work as a substitute. Tinned peaches can work, but ensure they’re unsweetened, or they’ll make the drink sickly sweet. If you’re really stuck, then good-quality peach baby food will do in a pinch. For a drier cocktail, use brut champagne or crémant instead of prosecco.
